Dice onion, sweet peppers and culantro. Set aside.

In a pot heat oil, and sauté the veggies until soft.

Add the pigeon peas and mix in.

If you can't find fresh pigeon peas you can use canned ones.

Add water to cover and cook until they are al dente (15 mins approx.).

Add the coconut milk and half cup of water. Season with salt & pepper.

Cover and cook on low heat for 30 mins or until rice is done.
