Spice up your fall mornings this season with this easy pumpkin spice French toast. This recipe is perfect for when you have leftover bread and pumpkin puree from a can.

Instructions
On your shallow plate, whisk in the egg custard ingredients, pumpkin puree, egg, milk, vanilla extract, pumpkin pie spice, and sugar.

Dip your bread into the egg mixture, flipping to cover both sides well. You can do it will all the slices or go one at the time before cooking.

In your frying pan, add butter and set heat to medium-low. Once the butter has melted, place your coated slices of bread to fry. For about 2-3 minutes per side or until golden brown. Do this in batches, so you don't overcrowd the pan.

Serve immediately with some maple syrup or some powdered sugar on top, more butter, and enjoy!

Notes
If you don't have day-old bread, a trick is to lightly toast it and dunk it in the egg mixture.Substitutions:
Milk: you can use whole milk or 2% cow's milk, half and half, or almond milk.
Day-old bread: any bread will work for this recipe. I prefer egg-based bread because it tends to soak the egg mixture better. Check out the tip below in case you don't have day old.
Brown sugar: could replace with white or light brown or use maple syrup or honey. The choice is yours!
Pumpkin pie spice: don't have it; use cinnamon or some nutmeg.
Butter: replace with ghee or oil (make sure it doesn't have a strong flavor).
