Ingredients

– Oil – Onion – Garlic – Bell pepper – Culantro leaves – Worcestershire sauce – Dried red kidney beans – Diced cooked ham and bone – Tomato puree – Seasonings: salt, black pepper – Water

Prep

01 Rinse the kidney beans and remove any imperfect ones.

02 Chop red bell pepper, culantro leaves and mince garlic.

Onion

Sauté the onion, garlic, and bell peppers until tender in some oil.

Add Worcestershire sauce and tomato puree and cook for a few minutes.

Add the rest of the ingredients, ham, bone, kidney beans, culantro leaves.

Pour the water in and scrape the bottom of the pot to prevent any sticking.

Pressure cook for 40 minutes, then let the pressure naturally release for 10 minutes, then quick release.

Remove the ham bone, shred the meat, and add it to the Instant Pot.

Serve it with *white rice *fried ripe plantains  *coleslaw.
