Panamanian Almojabano Recipe

Panamanian Almojabanos are fried dough in the shape of an “S” made with cooked corn, fresh cheese, and salt.  The “S” shape is for how you see Panama on the map.

pre-cooked yellow cornmeal salt water fresh white cheese oil for frying

In a large mixing bowl add water and salt, mix until the salt is diluted. Then add the cornmeal and knead.

Add in the crumbled cheese and knead until everything is incorporated and have a smooth dough.

To form the shape, take a portion of the dough, roll it into a ball and then roll it out like a stick.  Make the “S” shapes by moving the tips to one side and the other.

Fry them in oil for a few minutes on each side. Do this in batches. Remove from oil and drain on paper towel.
