Remove the kernels from the corn cob.

Add the corn kernels, brown sugar, salt, butter, egg, baking powder, milk, flour and pulse it until it's incorporated.

Add it to a mixing bowl. If you have a runny batter, add a little more flour.

Tips

You can process the corn kernels first by themselves to make sure they are all broken down.

Also let the batter rest for a couple of minutes in the fridge and it would help it thicken up a bit.

Take a spoonful of the batter and put it into the hot oil. Fry until golden brown.

Tips

Use a baking sheet lined with parchment paper and a cooling rack on top, to drain any excess oil. This will make sure the fritters comes crispy on the outside but soft on the inside.
