Eye of Round Steak in Peppercorn Sauce

1 pound beef eye of round thin steaks 3/4 tsp salt 1/4 tsp black pepper 1 tsp minced garlic 1 tsp onion powder 1 tsp olive oil 1 yellow onion, chopped 1 cup water 2 tbsp black peppercorns 1 tbsp cornstarch 1/2 tbsp butter

Season your steak with salt, pepper and spices (garlic, onion).

Using the "Sauté" function brown the steaks on each side and reserve.

Sauté the onions for 5 minutes and scrape the bottom of the instant pot.

Add the water, peppercorns and the eye of round slices back. Cover and set to "Pressure Cook" and set timer to 9 minutes.

Cover the Instant Pot and set the valve to "Sealing Position". Set the timer to 9 minutes. Once the time is up, let it rest for 10 mins before releasing the pressure.

Remove the steaks and place them on a plate. Make a slurry with the cornstarch and add to the sauce in the instant pot.

Add butter and let the sauce thickens for 3-5 mins. Add back the steaks and cover with sauce.

Serve with some green veggies, and white rice, and Enjoy!
