Maple Dijon Pork Chops

Equipment

Ingredients

  • 6 bone-in pork chops aprox (4 ounces each)
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 yellow onion
  • 2 teaspoon olive oil

Sauce

  • 1/2 tablespoon white wine vinegar
  • 1 teaspoon chopped garlic (aprox 1 clove chopped)
  • 3/4 cup chicken stock
  • 1/4 cup dijon mustard
  • 1/8 cup maple syrup

Instructions

Prep

  • Season the pork chops with salt, black pepper. Set aside, so the pork chops start absorbing the flavors. 
  • Mix the maple syrup, dijon mustard, garlic, and apple cider vinegar in a small bowl and set aside.
  • Peel and juliennes the onion.

Skillet Cooking Instructions

  • Heat your skillet to medium heat and add a teaspoon of the olive oil to it.  Brown each pork chop for 2 minutes on each side. Do this in batches and set aside.
  • Add another teaspoon of oil to the pan and let it heat up. Add the onion and saute for 2 minutes.
  • Mix in the low sodium chicken broth and the maple dijon sauce. Add the pork chops to the skillet.
  • Cover the skillet and cook for 20 to 30 minutes.

Skillet + Slow Cooker Cooking Instructions

  • Heat your skillet to medium heat and add a teaspoon of the olive oil to it. Brown each pork chop for 2 minutes on each side. Do this in batches and set aside.
  • Add another teaspoon of oil to the pan and let it heat up. Add the onion and saute for 2 minutes.
  • Mix in the low sodium chicken broth and the maple dijon sauce. Add to your Slow Cooker the sauce made on your skillet and the pork chops — cook on low for 4 hours, or high for 2 hours.

Instant Pot Cooking Instructions

  • Select Saute Function and once it is heated add a teaspoon of the olive oil to it. Brown each pork chop for 2 minutes on each side. Do this in batches and set aside.
  • Add another teaspoon of oil to the pan and let it heat up. Add the onion and saute for 2 minutes. Mix in the low sodium chicken broth and the maple dijon sauce. Add back the pork chops.
  • Turn off the saute function. Now, set your Instant Pot to Manual and set the timer for 12 minutes.
  • Cover and make sure your pressure valve is set to seal. Once the time is up, let the instant pot release its pressure naturally for 10 minutes and then move the pressure valve to quick release any remaining pressure.
  • Now your maple dijon pork chops are ready to be devoured. Enjoy!

Notes

The sauce will thicken once it cools. In case it is too runny, you can add some cornstarch (1 tablespoon) mixed with water and let it simmer for a couple of minutes until it has thickened to your liking.
