What ingredients would you need?
You’ll need the following ingredients:
- pork chops - bone-in gives more flavor to the meat
- olive oil
- half of an onion, chopped - if you prefer you can leave it out, it just adds more flavor
- low-sodium chicken stock or broth
- seasonings: salt, black pepper
- for the sauce:
- dijon mustard
- maple syrup
- white wine vinegar
- garlic
For utensils: a small bowl, spoon cooking thongs. To cook, you can use an electric pressure cooker, a skillet, or a Slow Cooker. Don’t worry. You won’t need the three items if you only have one. I got you covered. I’ll give you tips on how to cook with each appliance.
Once you have everything on hand, let's get started!
Step by Step instructions for the dijon pork chop recipe
Now, prep time. Season the chops with salt and pepper on both sides. In a small bowl, mix sauce ingredients: maple syrup, dijon mustard, garlic, and white wine vinegar. Set aside.
Skillet on Stove Top Instructions
If you only have a skillet, follow the next directions:
Heat a skillet on medium heat. Add half of the olive oil and brown the pork chops, 2 minutes per side (photo #1). Do this in batches. Browning the meat will always add more flavor.
We don’t need it to be fully cooked, only not pink on the outside. Once you finished with all the batches, remove and set aside.
Add the remaining oil to the skillet and saute the onions for 2 minutes. Next, add the low sodium chicken stock or broth and the maple dijon sauce to the skillet and mix (photo #2).
Turn down the heat to low and add back the pork chops. Cover and let it cook for 20 to 30 minutes.
Skillet + Slow Cooker Instructions
If you have a slow cooker and not a lot of time, my preferred method. Just dump everything and let it cook and head out the door. When you are back, enjoy your delicious meal.
Follow the same instructions as for the skillet method for the browning of the meat (photo #1), sauteing the onions and mixing the sauce (photo #2).
Add to your slow cooker your sauteed onions, the sauce, and the pork chops (photo #3). Cover the and let it cook for 4 hours on low or 2 hours on high.
The cooking time would depend on the thickness of your chops. If they are thin, 4 hours on low will work fine, but if they are thick between 6 and 8 hours on low.
Electric Pressure Cooker or Instant Pot Instructions
If you have an electric pressure cooker on an instant pot, follow these instructions:
Set your Instant Pot to the saute function. Once heated, add half of the olive oil. Brown the pork chops the same way you do them with the skillet, for 2 minutes each side (photo #4). Once done, set them aside.
Add the remaining oil and saute the onions for 2 minutes. Next, add the low sodium chicken stock or broth and the maple dijon sauce to the instant pot. Mix everything, add the pork chops (photo #5), turn off the saute function.
Cover the instant pot and move your pressure valve to seal. Select your pressure cooker to manual mode and set the timer for 12 minutes on high pressure.
If the pork chops are thin, 10 minutes for pressure cooking, time will work fine, but if they are thick between 12 and 15 minutes of pressure cooking.
When the timer ends, let it natural release for 10 minutes and then move the pressure valve to vent to release any remaining pressure.

Now, this recipe if part of my list of recipes for meal prep, I can use whichever method I want to, when I feel too.
Tips to cook this recipe
Some tips to make this dish at home:
- Replace the maple syrup with honey.
- Out of white wine vinegar? Substitute with apple cider vinegar.
- You don’t have chicken stock, no worries you can replace with water, with the browned bits of the browning you should have flavor.
- You can also use the sauce as a marinade. Marinate the pork chops before time if you like, with half of the dijon maple sauce mixture for at least 30 minutes. When you brown them leave them less time so they don´t burn.
- In any of the cases, the sauce turns out runny or too liquid, you could add some cornstarch to thicken it up a little. Once it cools down, it tends to thicken up.
Serving Suggestions
The maple dijon, sweet and savory sauce pairs well with:
- brown rice and some greens
- baked potatoes
- mashed potatoes
- Roasted sweet potatoes
- cauliflower rice
- a fresh salad
- any greens of your choice: broccoli, green beans, brussels sprouts, sauteed spinach.
Storing Instructions
You can store in an airtight container in the fridge for up to 4 days. Believe when I say they usually never get to the 4th day.
You can also freeze it for up to 3 months. To reheat, you should thaw it overnight and heat up in the stove or the microwave for a couple of minutes.
