Roasted Pumpkin Soup

01 Preheat oven to 350ºF.

02 Prepare all your ingredients for cooking. Cut the ingredients roughly the same size.

Onion

Place your chopped veggies (pumpkin, carrots, onion, apple) on a baking sheet add some oil and season with garlic powder, s&p and thyme.

Roast for 25 minutes or until de pumpkin is soft.

Transfer to a blender and add the chicken broth. Blend until smooth. Pour into a saucepan and simmer for 5 minutes over low heat and adjust seasonings.
