Plantain  Lasagna Recipe

01 Chop your onion, carrot and celery.

02 Slice your plantains in strips.

03 Line your loaf pan with parchment paper.

Brown your ground beef and sauté the veggies and mix together.

Season with oregano, salt and add diced tomatoes, simmer for 10-15 mins.

Mix cottage cheese, Italian seasoning and egg and set aside.

Fry the plantain strips on each side and set aside.

To assemble, layer fried plantains, cheese sauce, beef sauce, mozzarella cheese and repeat.

Mix the remaining cheese sauce with the beef sauce and top the plantain layer, add mozzarella.
