Zucchini Crustless  Quiche

01 Preheat your oven to 350º F.

02 Dice onions and shred your zucchini and set aside.

03 Line baking tin with parchement paper.

Sauté onions, zucchini, and spinach for a couple of minutes and then add the nutmeg.

Beat eggs with salt and pepper, cottage cheese and the sautéed veggies.

Add egg mixture to the lined baking pan and sprinkle mozzarella cheese on top.

Bake for 35 minutes at 350ºF or until golden brown on top.
