Chocolate Lover Alert! You must try these extra fudgy oat flour brownies with walnuts for added texture and a decadent chocolate flavor made from scratch.
These brownies can be made for any occasion or when you are craving something sweet, or even for Valentine's Day.

The first time I made this recipe, I was checking what things had leftovers in my kitchen in addition to the desire to eat something sweet.
This recipe works because it's easy to make, and it tastes delicious.

📋 Ingredients for the recipe
To prepare this recipe, you will need two types of chocolate, semi-bitter and milk chocolate, dates, coconut oil, eggs, sugar, cocoa powder, oatmeal, salt, vanilla extract, and nuts.

💡 Tip: To make the oat flour, just process some old-fashioned rolled oats in a food processor or blender as fine as you like.
I used different types of chocolate, semi-bitter, milk chocolate, and cocoa powder because I wanted to contrast flavors and add an intense chocolate flavor.
The utensils needed a brownie pan (10cm x 7cm), a blender, a spatula, and two mixing bowls.
You’ll also need parchment paper to line the pan to prevent the brownies from sticking to the pan.
Once you have all the ingredients and utensils, let's start.
📝 How to make the recipe? - Step by Step
Step 1: First, preheat the oven to 325 F.
Step 2: Line your baking pan with parchment paper, and set it aside.
Step 3: To start, melt the chocolate in the microwave. To do this, reduce the power to 50% and then heat in 30-second intervals, stirring between each interval. This helps the chocolate to melt evenly.
Wait until it cools to mix it with the rest of the ingredients.
Step 4: Soak the dates to hydrate them in hot water for 5 minutes. Blend the dates with a little of the water you used to hydrate them into a smooth paste consistency.
Step 5: In the other bowl, mix the wet ingredients coconut oil, melted chocolate, eggs, date paste, and vanilla extract.
Step 6: In a bowl, mix all the dry ingredients: cocoa powder, oatmeal, salt, and sugar.
Step 7: Then slowly incorporate the dry ingredients into the wet ingredients until just combined. Mix in a folding motion.
Make sure you don't over mix. Add the walnuts to the mixture.
Step 8: Transfer the brownie mixture to the pan and bake for 35 minutes.
Step 9: Once they're done, let them cool for at least 10 minutes.
Step 10: Brownies are easier to cut when cooled completely. Cut into 12 pieces. If you prefer, you can cut them smaller or larger. It’s a matter of preference.
The flavor intensifies the next day. I tried it and couldn't help but eat more than one. They taste amazing! They are not super sweet and have an intense chocolate flavor.

Fudgy Oat Flour Brownies
Ingredients
- 4 ounce bittersweet chocolate
- 2 ounce milk chocolate
- ½ cup pitted dates
- ½ cup melted coconut oil
- 2 eggs, at room temperature, medium size
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ⅓ cup brown sugar
- ⅓ cup cocoa powder
- ⅓ cup oat flour, + 2 tablespoons
- ¼ cup walnuts, chopped
Instructions
- Preheat oven to 325°F.
- Line a 10×7 baking pan with parchment paper. You can use a smaller baking pan if you prefer.
- In a bowl melt chocolate in the microwave in 30 seconds interval at 50% power.
- Soak your pitted dates in hot water for 5 minutes, then blend with a few teaspoons of water that you used to soak them. It should be a smooth paste.
- In a large bowl mix all the wet ingredients: eggs, date paste, melted chocolate, vanilla extract and melted coconut oil.
Note: Since the melted chocolate and coconut oil was a little warm, I added a little bit first and mix it well with the eggs to prevent them from scrambling, this is called tempering. - In another bowl mix the dry ingredients oat flour, cocoa powder, sugar, and salt.
- Add the walnuts and fold the dry ingredients into wet ingredients until combined.
- Place mixture in lined baking pan and bake for 35 minutes.
- Remove from oven and let it cool completely.
- Once cooled cut into 12 pieces and enjoy your fudgy brownies!
Notes
- Bitter or milk chocolate: you can use the full amount of either one or the other or mix it as I did.
- You can omit the nuts. They were added to add another texture to the brownie. If you prefer, you can change it for chopped almonds.
- Coconut Oil: If you are allergic or simply do not like coconut flavor, you can replace it with a mild-flavored oil like canola or vegetable oil.

- Serve them warm with a scoop of vanilla ice cream. This combination is excellent. This is my favorite way to eat them.
- You can eat them cold if you prefer.
- You can sprinkle on some cocoa powder or powdered sugar. A little chocolate sauce wouldn't hurt.

❓FAQs and Tips
You can store it in an airtight container for up to 3 days. To heat it, you can do it using a microwave for a few minutes.
You can freeze them without problems. Add them to a freezer bag sealed tight and they will last for 1 month and a half. I usually take one out and microwave it and serve it with vanilla ice cream, and it tastes the same as the first day.
If you need to make a gluten-free version, you will only need to look for certified gluten-free oat to make oat flour. You can also check that the chocolate chips are gluten-free. The rest of the ingredients are gluten-free.
