    Carrot Cake Overnight Oats, A Sweet Breakfast Treat

    They’ll remind you of eating a delicious carrot cake with cream cheese frosting.

    Today I’m sharing an easy-to-make recipe, healthy carrot cake overnight oats.

    ⭐️ Why this recipe works

    • They are a great choice when you don’t have much time in the morning. 
    • You can also include them in your meal prepping day.
    • There is no cooking involved in a win-win situation.
    • Plus, it has a serving of vegetables, which is excellent.
    • Perfect breakfast on the go option.

    📋 Ingredients for the recipe

    Overnight oatmeal has a million ways to prepare them, I tried the version with greek yogurt, but I wasn’t a fan. I think is because I don’t like the typical flavor of yogurt.

    So after some trial and error, I found the perfect consistency for the overnight oats.

    To make the recipe, you will need the following:

    • For the base recipe:
      • old fashioned oats
      • vanilla almond milk
      • chia seeds
      • maple syrup
    • For the carrot cake flavor:
      • shredded carrots
      • cream cheese
      • cinnamon
      • vanilla extract
      • raisins

    You would also need a bowl to mix all the ingredients in, a spoon, and two 8oz or 16 oz mason jars or small recipients with a lid that you can refrigerate.

    I prefer using glass containers that help keep your food fresher longer. Mason jars are fairly easy to use and a great on-the-go option.

    Look for jars with a wide mouth to make them easier to pour in and mix.

    Substitutions

    • Rolled oats – If you need it to be gluten-free, use certified gluten-free oats. You can try using quick-cooking oats but do not leave it overnight.
    • Vanilla almond milk – You can use any milk, dairy, or no dairy, I have used regular milk or 2%, and it tasted delicious.
    • Chia seeds – I haven’t tried replacing it with flaxseed, but it may work. If you try it, let me know.
    • Maple syrup – You can replace it with your sweetener of choice, but you’ll need to taste it. 
    • Raisins – Omit if you don’t like raisins or replace them with golden raisins or chopped dates!
    • Cream cheese – I haven’t tried dairy free option. If you try it let me know how it works.

    📝 How to make the overnight oats with carrots and cream cheese

    Now on to the preparation, you can divide the ingredients between making a single serving or even doubling the recipe for your meal prep.

    Make sure that your cream cheese is at room temperature so it is easy to combine.

    In a bowl, add all your dry ingredients, rolled oats, chia seeds, cinnamon, shredded carrots, raisins, and mix until combined.

    Next, add your milk, maple syrup, and cream cheese to the dry ingredients and mix well.

    Pour into each mason jar and add a dash of cinnamon on top. Put the lid and store them in the fridge for at least 4 hours or overnight.

    Once the time has passed, remove your carrot cake overnight oatmeal from the fridge and enjoy cold, chilled, or warmed. It’s so delicious.

    ✅ Recipe Tips and Common Questions about Overnight Oats

    Storing: You can store these in the fridge for up to 5 days. The more it stays in the refrigerator, the more the oats will soak up the liquid. If that is the case, add a little more milk until it reaches your liking consistency.

    Reheat: Put the mason jar for a couple of minutes in the microwave. You could also add a little more liquid to them so they can loosen up.

    If you prefer, you can add toppings to the oats, like more carrots or raisins.

    Want a little texture? You can add chopped walnuts or pecans, or even coconut flakes.

    Before eating, I leave it out of the fridge for at least 30 minutes, so it’s not that cold.

    You can double this recipe by doubling the number of ingredients, following the same steps, and dividing the mixture into four (4) jars instead. 

    Which type of oats is best for overnight oats?

    Rolled oats are the best type of oats for overnight oats. These absorb the liquid nicely.

    Do you eat overnight oats warm or cold?

    You can eat overnight oats, either warm or cold. It’s a personal preference. If you want to have it warm, heat it in the microwave for a couple of minutes and enjoy!

    What size jar is best for overnight oats?

    The best size jar for overnight oats would be between 10 and 16 oz, with a wide mouth that will make it easier to add and eat. And you can add more liquid, and it won’t overfill.

    Ingredients

    • 1 cup rolled oats
    • 1 cup vanilla almond milk
    • 1 tablespoon chia seeds
    • 2 tablespoon cream cheese
    • 1 tablespoon maple syrup
    • 1/2 cup grated carrots
    • 1/4 cup raisins
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon cinnamon

    Utensils

    • Two 8oz or 16oz mason jars

    Instructions

    • In a small bowl, mix all the ingredients. 
    • Separate in two mason jars and refrigerate a minimum of 4 hours or overnight.
    • Now it is ready to enjoy! You can heat it up in the microwave or eat it as is.
