    Pumpkin Spice French Toast

    Spice up your fall mornings this season with this easy pumpkin spice French toast. This recipe is perfect for when you have leftover bread and pumpkin puree from a can.

    Today I share with you an easy recipe to make and that uses the leftovers you have at home from pumpkin season.

    📋 Ingredients You’ll Need

    These are the main ingredients and some substitutions for them:

    • Pumpkin puree
    • Milk: You can use cows or any milk substitute like almond milk. Even half and half will work.
    • Day-old bread: any bread will work for this recipe. I prefer egg-based bread because it tends to soak the egg mixture better. Texas toasts or Challah bread will work since they are thicker. Check out the tip below in case you don’t have day old.
    • Brown sugar: could replace with white or light brown or use maple syrup or honey. The choice is yours!
    • Pumpkin pie spice: don’t have it; use cinnamon or some nutmeg.
    • Butter: ghee or oil will work, make sure it doesn’t have a strong flavor, try using vegetable oil, canola or avocado oil.

    As for utensils, you’ll need a frying pan, a shallow bowl, a whisk or a fork, and a spatula. Now let’s get cooking.

    📝 How To Make Pumpkin Pie French Toast

    To start, let’s prepare the egg mixture for the french toast. In your shallow bowl whisk together the egg, pumpkin puree, milk, vanilla extract, and sugar.

    💡 Tip: If you don’t have day-old bread, a trick is to toast the bread before dunking it in the egg mixture.

    Now, dip the bread slices into the egg mixture. Flip it to cover all sides well. You can dip all the slices and then cook them one by one. You can place them on a lined baking sheet until they wait for their time to cook.

    Or stack them on top of each other as I did!

    Heat the stove over medium heat, and add butter to melt on your frying pan. Fry the coated slices of bread for about 2-3 minutes per side or until golden brown. Avoid flipping too much. Once per side is fine.

    💡Tip: If you have a griddle, it will work well to cook these. Better for cooking in a bigger batch.

    Once you are done with all the slices of bread, serve with some maple syrup, powdered sugar, and more butter, and enjoy!

    If you don’t have day-old bread, a trick is to lightly toast the bread before soaking it in the egg mixture.

    Use a griddle for cooking in a bigger batch.

    You can cook them all, reheat or toast them in your toaster or air fryer, and enjoy them for breakfast.

    Don’t overcook them, because they will dry out.

    Recipe Variations

    • Make them stuffed by mixing a few tablespoons of cream cheese and maple syrup, and some pumpkin puree. Add them to the bread and make a sandwich before soaking. Continue the process as listed with the cooking.
    • Cook them in the air fryer after soaking them. Air fry for about 6 minutes, flipping halfway at 330º F.
    • Make french toast sticks for the kids, slice the bread into sticks, and follow the same steps.
    • Add ¼ cup of greek yogurt to the egg mixture if you want more protein.

    Serving Suggestions

    Try topping your pumpkin spice french toast with any of these:

    • maple syrup,
    • powdered sugar,
    • whipped cream,
    • cinnamon sugar,
    • chopped walnuts or pecans.

    If you have them for breakfast, any french toast pairs well with some bacon, scrambled eggs, quiche, or sausage links.

    If you have them for dessert, serve them with vanilla ice cream and a drizzle of caramel syrup, these two are the perfect combo!

    How do I keep my French toast from being soggy?

    To avoid your French toast from becoming soggy, use day-old bread or lightly toast it and avoid dipping it for too long into the custard mixture.

    Should French toast be soft or crispy?

    French toast should be slightly crispy and golden brown on the outside but soft on the inside. If it’s dry, it was overcooked.

    Ingredients

    • ¼ cup pumpkin puree
    • 1 egg, large
    • ½ cup milk
    • 8 bread slices, day old you can use any type of bread you have on hand
    • 1 teaspoon vanilla extract
    • 1 teaspoon sugar
    • ½ teaspoon pumpkin pie spice
    • 1 Tablespoon butter, more for serving

    For Garnish

    • maple syrup
    • walnuts

    Utensils

    • Frying Pan
    • Shallow bowl
    • Spatula

    Instructions

    • On your shallow plate, whisk in the egg custard ingredients, pumpkin puree, egg, milk, vanilla extract, pumpkin pie spice, and sugar.
      ¼ cup pumpkin puree, 1 egg, ½ cup milk, 1 teaspoon vanilla extract, 1 teaspoon sugar, ½ teaspoon pumpkin pie spice
    • Dip your bread into the egg mixture, flipping to cover both sides well. You can do it will all the slices or go one at the time before cooking.

    • In your frying pan, add butter and set heat to medium-low. Once the butter has melted, place your coated slices of bread to fry. For about 2-3 minutes per side or until golden brown. Do this in batches, so you don’t overcrowd the pan.

    • Serve immediately with some maple syrup or some powdered sugar on top, more butter, and enjoy!
