These are the main ingredients and some substitutions for them:
- Pumpkin puree: the main flavor ingredient.
- Milk: You can use cows or any milk substitute like almond milk. Even half and half will work.
- Day-old bread: Any bread will work for this recipe. I prefer egg-based bread because it tends to soak the egg mixture better. Since they are thicker, Texas toast, French Bread, or Challah bread will work. Check out the tip below in case you don't have day old.
- Brown sugar: could replace with white or light brown or use maple syrup or honey. The choice is yours!
- Pumpkin pie spice: don't have it; use cinnamon or some nutmeg.
- Butter: can be salted or unsalted. Ghee or oil will work; ensure it doesn't have a strong flavor. Try using vegetable oil, canola, or avocado oil.

- Let's prepare the egg mixture for the French toast. Whisk together the egg, pumpkin puree, milk, vanilla extract, and sugar in your shallow bowl.
💡 Tip: If you don't have day-old bread, a trick is to toast the bread before dunking it in the egg mixture.
- Now, dip the bread slices into the egg mixture. Flip it to cover all sides well. You can dip all the slices and then cook them one by one. You can place them on a lined baking sheet until they wait for their time to cook.
Or stack them on top of each other as I did!
- Heat the stove over medium heat, and add butter to melt on your frying pan.
- Fry the coated slices of bread for about 2-3 minutes per side or until golden brown. Avoid flipping too much. Once per side is fine. Do this in batches.
💡Tip: If you have a griddle, it will work well to cook these. Better for cooking in a bigger batch.
