In my house, after the holidays, there is always something left, either in the freezer or the family bringing stuff.

So I take advantage and make this breakfast until the bread is finished hahaha. There are only two of us at home, so the bread lasts. Or I keep the “rosca” in the fridge.

Its tradition in most houses to have “rosca” for the holidays; made with egg, it looks like a braided bread that connects on the ends.

Today I share an easy recipe that uses the leftovers you have at home after all these New Year's Eve parties and toppings and accompaniments to enjoy them.

    📋 Ingredients for the recipe

To prepare this recipe, you will need: egg bread (“Rosca”) cut into slices, eggnog, medium egg, nutmeg, vanilla, and butter. In the recipe card below, you will have the complete measurements of each ingredient.

    ingredients served on plates

As for utensils, we will use a frying pan, a deep plate, and a spatula.

Now that we have all the ingredients and utensils let's start.

💡 Tip: You can use any bread you have at home. Preferably a couple of days old. I prefer egg bread, which absorbs the mixture better.

    Substitutions:

    • Eggnog: you can use the one with alcohol if you want. I prefer the nonalcoholic version option so that you can share it with the children. You can use homemade if you have it on hand.
    • Rosca de Pan (Egg Bread): you can use any bread on hand. It is easy to use the leftover rosca. I recommend using any bread made from egg, as it generates a better consistency and absorbs the mixture.
    • Spices: if you like almonds, you can add almond essence, which gives it a delicious flavor. You can add cinnamon powder if you prefer. It is like the traditional flavor of french toast.

📝 How to make the recipe? - Step by Step

Step 1: In the deep plate, add eggnog, nutmeg, egg, and vanilla. Mix everything until everything is combined.

Step 2: Heat the pan over low heat and add the butter so that it melts.

    Step 2

Step 3: Pass the bread through the mixture on both sides.  Fry for 3 minutes on each side or until it’s golden brown. Repeat this process until you finish cooking all the toast slices.

Step 4: Once golden on both sides, remove from the pan and serve. You can add maple syrup, honey, or more eggnog on top. Enjoy!

    FAQ and Serving Suggestions

How to store French toast leftovers?

You can store them in an airtight container for up to 3 days.

Can I do them in advance?

You can cook them in advance one or two days before and reheat them in the pan with a little more butter. If you have an air fryer, you can heat them there (4-5 minutes at 330℉).

    Serving Suggestions and Toppings:

    • You can serve this french toast with a cup of coffee and scrambled eggs.
    • If you prefer and have ham or turkey left over from the holidays, you can make an omelet and serve it with them.
    • You can eat it for dessert if you serve it with vanilla ice cream. This combination is a success, and you must give it a try!
    • You can use toppings like fruit (banana, strawberries, canned peaches), a little powdered sugar, maple syrup, honey, or even a bit more eggnog.
